Chicken & Rice Noodle Stir-Fry

Ingredients
- 1.5lbs boneless chicken thighs with skin - cubed
- 3 baby bok choy
- 1 red bell pepper
- 1 yellow bell pepper
- 1 bunch green onions (slice up and toss the bottom 2 inches of 3 shoots into the pan with vegetables - the rest to serve)
- 1/2 head of broccoli
- 1 cup or so of bean sprouts
Directions
Prep chicken in a bowl with approx. 1/4 cup flour, 1/8 cornstarch, white pepper, garlic powder, ginger powder, cayenne pepper, salt. Rest in bowl for 30min.
On high heat cook chicken until brown on both sides. Remove and set aside.
Cook your rice pasta in boiling water for 5 minutes and strain and set aside.
Deglaze pan with a little chicken broth and white wine. Add broccoli and cover to steam for a few minutes.
Add remaining vegetables and cook for ~5 minutes.
Add noodles to pan along with the chicken.
Pour stir-fry sauce in and cook for 2-3 more minutes. Gently toss all ingredients together.

For this sauce today I just quickly threw together ½ cup soy sauce, ½ cup water, chicken bouillon, garlic powder, ginger powder, chili flakes, white pepper, brown sugar, and a little salt. It made about 1 cup of liquid. I did end up adding around ¼ cup more soy sauce at the end.
