Ingredients

1 Cucumber
-
8oz Grape Tomatoes
-
¼ Red Onion
-
2 tbsp Lemon Juice
-
1 ½ tbsp Olive Oil
-
1 tbsp Dry Italian Herbs
-
½ tbsp Garlic Powder
-
½ tbsp Fresh Basil
-
1 tsp Salt
-
1 tsp Pepper
Directions
Peel cucumber lengthwise so that the majority of the skin is gone. Leave small strips of peel for decorative purposes or remove all if preferred
Slice cucumber into thin rounds & then quarter
Cut tomatoes into halves
Lyonnaise red onion (cut into small strips)
Add chopped vegetables to a medium-sized bowl
Chiffonade the fresh basil & add to the bowl
Add remaining ingredients to bowl & mix
Allow to chill in the fridge for 2 hours before serving
Recipe Note
Note: All of the ingredients can be increased or decreased depending on personal preferences. You may want to add more or less salt. The same goes for the herbs.
