When it comes to Mediterranean food a delicious and spicy feta cheese dip is a must! Our family enjoys grilling up some meat and pairing this cheese with the meal. I personally enjoy it on its own straight out of the bowl, although your guests may not be a fan of that (cross-contamination), however, if you find yourself enjoying this on your own I hope you go to town on it! The flavors are subtle with a bit of a bite. The cheese can be eaten as a dip with fresh pita or naan bread, or paired with grilled chicken or beef.If you want to truly round out the dish (since it is technically a side dish) pair this with fresh tzatziki, sliced cucumbers, tomatoes, & red onions, a simple mushroom rice pilaf, and of course your meat of choice. For those that enjoy a little extra spice, a pinch or two of ground cayenne pepper add a lovely punch of heat that doesn't overpower the dish. Delicious Feta Cheese dip!
Ingredients

12oz Feta Cheese
-
Roasted Red Bell Peppers, Jarred in Brine

4 Cloves Minced Garlic
-
1 tbsp Garlic Paste

1 tbsp Olive Oil
-
½ tsp Salt
-
½ tsp Pepper
-
ground cayenne pepper (optional)
Directions
Put the feta cheese in to the food proessor.
Add half of the jar of the roasted red bell peppers as well as the brine into the food processor.
Add the olive oil, garlic paste, salt, & pepper.
Blend and puree all ingredients together until fully combined.
Once pureed, taste to ensure there’s enough salt and garlic. Sometimes you may need to add more roasted red bell peppers. If you want it spicier, add some ground cayenne pepper.
Pour finished product back into the original feta cheese container to store in the fridge.
Recipe Note
Note: Use a food processor to make whipped and spicy feta cheese. This can be eaten many ways, but I prefer to have it with grilled meat alongside a salad and lot of pita bread to scoop it all up!
